The particles carry the meaning

lah, leh, lor and sia change the tone of the whole sentence. Short unstressed syllables are exactly what a model strips as disfluency.

Singlish — two languages in one sentence

Singlish drops the verb 'to be', fronts the topic, and ends sentences with particles borrowed from Hokkien and Malay. Every one of those is something a transcriber trained on standard English will helpfully repair — so the output is grammatical, fluent, and not what anyone said. Transcribing against the audio rather than toward a standard is the difference.
